Couscous-Stuffed Peppers with Basil Sauce

Monday, March 11, 2013

Ahh comfort food for a cold (not to mention snow-covered) Monday evening. Delight. To me, comfort food equals anything that regularly showed up on the dinner table when I was a child, is easy to put together, and makes the entire house smell delicious while it cooks. Today, my comfort food of choice is stuffed peppers. It seems to me, that of all the comfort foods out there, stuffed peppers seem to get pushed to the corner and forgotten. I've not quite figured out why however, since they are so tasty and delicious.

The great thing about stuffed peppers, besides being quick and easy to put together, is all of the different things they can be stuffed with. The most traditional stuffing usually includes a mixture of beef, rice and tomatoes. This meatless Monday, I decided to venture out on a limb with a new stuffing recipe that evokes a memory of days-gone-by and incorporates some very summery flavors into this never-ending winter. Also, for all of you lacto-vegetarians out there, this one's for you!

(Lacto-Vegetarian = someone who does not eat beef, pork, poultry, fish, or animal flesh of any kind, but does eat dairy products).

Step One: Gather the ingredients. You can substitute chopped raisins for currants if you can't find them.

Step Two: Cook the couscous, and combine the ingredients for the filling in a large bowl.

Step Three: Prepare and arrange the peppers in a 8x8 baking dish and stuff with the filling. Don't forget to add 3/4 inch water to the dish before baking at 400 degrees for 55-60 minutes.

Step Four: While the peppers are baking, use a blender or food processor to make the sauce.

Transfer the pepper to your plate, spoon the sauce over the top, and enjoy the first bite!

COUSCOUS-STUFFED PEPPERS WITH BASIL SAUCE | Yield: 4 servings | Total Time: 1 hr 15 min.

INGREDIENTS:

FILLING:
1 C low-sodium chicken broth
2 tsp ground cumin
3/4 C couscous
1 C canned garbanzo beans, rinsed and drained
1/4 C dried currants*
1 C packed baby spinach leaves
1/2 C (4 oz) crumbled feta cheese
1/4 C extra-virgin olive oil, plus more for drizzling
kosher salt & fresh-ground black pepper
2 green bell peppers
2 red bell peppers
hot water, as needed

*NOTE: If you can't find dried currants, substitute raisins, slicing them into halves or quarters before incorporating into the filling.

SAUCE:
1 C packed fresh basil leaves
1/2 C (4 oz) creme fraiche*
3 Tbsp extra-virgin olive oil
1 Tbsp water
1 garlic clove, chopped
2 tsp fresh lemon juice
1/4 tsp sugar
1/4 tsp salt
1/4 tsp black pepper

*NOTE: homemade creme fraiche recipe HERE

DIRECTIONS:

Preheat oven to 400 degrees.

FILLING: In a medium saucepan, bring chicken broth and cumin to a boil over medium-high heat. Remove from heat and stir in the couscous. Cover the pan until the couscous is tender and all the liquid is absorbed, about 5-6 minutes. Transfer the couscous to a large bowl and add the beans, currants, spinach, feta and 1/4 C olive oil. Season with salt and pepper, to taste. Stir until all ingredients are combined.

Slice the tops off the peppers and remove all the ribs and seeds. Arrange in an 8x8 square baking dish, and stuff the peppers with the filling, drizzling the tops with olive oil. Fill the baking dish with 3/4-inch hot water and bake until the filling is golden and the peppers are cooked through, about 55-60 minutes.*

*NOTE: If the tops are browning too quickly, tent with foil.

SAUCE: In a blender or food processor, combine basil, creme fraiche, olive oil, water, garlic, lemon juice, sugar, salt, and pepper. Blend until smooth. Adjust seasoning with salt and pepper.

After plating the stuffed peppers, spoon the basil sauce over the top and serve.

Bruschetta Parmesan Chicken

Wednesday, March 6, 2013

I was looking for inspiration for a quick weeknight meal when I stumbled upon an appetizing looking recipe for Bruschetta Chicken. If you know me, you know I'm a pretty big fan of tomatoes. I make it my mission to find ways to incorporate them into almost every meal. I cut them up to put on salads, mix them in with pasta, eat them with hummus, add them to soups and stews, serve them up on crusty bread...heck, I've even made tomato pie! Get my point? I LOVE TOMATOES.

Enter bruschetta chicken. Chicken is great for winter months because it can quickly and easily be roasted in the oven, and there are thousands of different ways to season it depending on what you are in the mood for. As mentioned above, I'm always in the mood for tomatoes, and when I saw bruschetta was involved, there wasn't even a second thought before I knew what was for dinner.

Step One: Gather the ingredients. You'll want about 1.5 cups of diced tomatoes.
Adjust ingredients for whatever size tomatoes you find.

Step Two: Rinse the chicken, coat with flour, and dip in an egg wash. Place egg-washed chicken in a 9x13 roasting pan. Mix up the parmesan/garlic crouton breading, then spoon onto top of chicken.

Step Three: Loosely tent with foil, and roast for 30-40 min. at 375 degrees, or until chicken
is slightly browned on top. Remove foil, and spoon bruschetta mix over the top
for an additional 5-7 minutes, or until heated through.

BRUSCHETTA PARMESAN CHICKEN | Yield: 4 Servings | Total Time: 1 hour

INGREDIENTS:

4 boneless skinless chicken breasts (approx. 1.5-2lbs)
1/2 C all-purpose flour
2 eggs, whisked
1/2 C parmesan cheese, shredded
1/2 C garlic croutons
2 Tbsp butter, melted
2 large tomatoes
3 Tbsp fresh basil, minced
2 garlic cloves, minced
2 Tbsp extra-virgin olive oil
kosher salt
pepper

DIRECTIONS:

Preheat oven to 375 degrees. Grease a 9x13 baking dish and set aside.

Rinse chicken and pat dry with paper towel. Get out two separate shallow bowls (you'll be using these to coat the chicken, so pick bowls large enough to hold a chicken breast). Add flour to one bowl, and whisk the eggs in the other. Dip chicken into flour first, then into whisked eggs. Transfer to a 9x13 baking dish. Repeat with all chicken breasts.

*NOTE: You can sprinkle the chicken with a little salt and pepper at this step if you'd like some extra flavor.

Melt 2 Tbsp butter in a microwave safe medium bowl. Put 1/2 C garlic croutons in a plastic bag and crush with a meat mallet or bottom of a heavy glass. Once the butter is melted, add 1/2 C parmesan cheese and 1/2 C crushed garlic croutons, stir to combine. Top each chicken breast with parmesan garlic topping and tent baking dish with foil. Bake for 30-40 minutes, or until topping is browned and chicken is cooked through.

While chicken is cooking, dice tomatoes, mince garlic and basil. Combine in a medium bowl, drizzle with olive oil, and add salt and pepper to taste. When chicken is cooked, remove foil and spoon bruschetta mix over the chicken. Continue to cook for 5-7 minutes, or until tomato topping is heated through. Serve immediately.

Strawberry Walnut Blue Cheese Salad

Monday, March 4, 2013

Good morning everyone! I hope you all had a fabulous weekend. Mine was jam-packed with a road trip back to Iowa for a lovely bridal shower for my future sister-in-law 'H', a wonderful evening spent meeting some of her college friends involved in the upcoming wedding, and some serious hours spent shopping for wedding shoes with my very indecisive mom - love you! Also making the weekend complete was catching up with my good friend 'J', who is consistently stylish, and has an amazing wardrobe that makes me feel like I should go throw out half of my closet and start over...sigh...I sense some shopping road-trips to the city in my future! Anyways...on to the good stuff.

Today, as you know (or should if you've been following along), is another meatless Monday. After a weekend of eating out at some of the local restaurant favorites in my hometown, I think a light meatless Monday is just what the doctor ordered to get my healthy eating back on track for the week.

Gather the ingredients -  lettuce, blue cheese crumbles, strawberries, walnuts, raspberry vinaigrette.

Put it all together on a plate. Bonus: this salad looks super fancy when plated, and is a sure way to impress your dinner guests with little to no effort to put together!

STRAWBERRY WALNUT BLUE CHEESE SALAD | Total Time: 5 minutes

INGREDIENTS:

1 box organic field greens
Strawberries, sliced
Chopped walnuts
Blue cheese crumbles (you can buy the pre-crumbled tub, or a wedge of blue cheese and crumble yourself)
Raspberry vinaigrette*

Grilled chicken, cubed
- For those of you not quite ready to tackle a fully meatless meal, grilled chicken would make an excellent addition to this salad.

*NOTE: Be sure to read the labels on the back of your salad dressing. My rule of thumb is, if one of the first five ingredients is something you can't pronounce - or contains High Fructose Corn Syrup - or you don't know what it is, find something else. Many bottles are labeled 'All Natural' or 'Organic', and do not have high amounts of dyes, additives or preservatives, making them a better choice for 'clean' eating.

DIRECTIONS:

Arrange the desired amount of lettuce on a plate, and top with sliced strawberries, crumbled blue cheese, chopped walnuts, and your desired amount of raspberry vinaigrette. Wa La! That's all!

To me, this dish feels very French, and makes me think I'd like a flute of champagne to sip while reading a book, people watching, or catching up with friends at a corner bistro on a sunny afternoon. Now if only I could find a way to get to France and test my theory!

Happy Friday everyone! If your weekend ahead is anything like mine, you will be Busy. Busy. Busy. Here's a little something sweet to start your weekend out right!

Chewy. Gooey. Delicious. Oatmeal. Dark Chocolate. Cookies. Enough said.

After gathering the ingredients, follow directions in recipe below. Chilling the dough is not necessary, but it will help the cookies hold their shape. Adjust cook time if you do not chill dough first.

Preheat the oven to 350 degrees. Remove cookie dough from fridge, and use a cookie scoop to form cookies. Place the cookie dough balls on a parchment-lined baking sheet. You should be able to fit 12 per sheet.

Bake for 11-13 minutes, or until the edges are golden and the middle still appears slightly undercooked. Remove from oven, and allow to cool five minutes on the cookie sheet before transferring to a cooling rack.
