Oatmeal Dark Chocolate Chip Cookies

Happy Friday everyone! If your weekend ahead is anything like mine, you will be Busy. Busy. Busy. Here's a little something sweet to start your weekend out right!


Chewy. Gooey. Delicious. Oatmeal. Dark Chocolate. Cookies. Enough said.


 After gathering the ingredients, follow directions in recipe below. Chilling the dough is not necessary, but it will help the cookies hold their shape. Adjust cook time if you do not chill dough first.

Recipe adapted from Smitten Kitchen

OATMEAL DARK CHOCOLATE CHIP COOKIES | Yield: 24 | Total Time: 1 hour

INGREDIENTS:

1/2 C butter, softened
2/3 C light brown sugar
1 large egg
1/2 tsp vanilla
3/4 C all-purpose flour
1/2 tsp baking soda
1/2 tsp ground cinnamon
1/4 tsp kosher salt
1 1/2 C old-fashioned oats
3/4 C dark chocolate chips
1/2 C walnuts, chopped (optional)

DIRECTIONS:

In the bowl of a stand mixer, cream together butter, brown sugar, egg and vanilla until smooth. Add flour, baking soda, cinnamon and salt. Mix to combine. Add oats, dark chocolate chips and walnuts, if using. Mix to combine. Chill the cookie dough for 30 minutes.

Preheat the oven to 350 degrees. Remove cookie dough from fridge, and use a cookie scoop to form cookies. Place the cookie dough balls on a parchment-lined baking sheet. You should be able to fit 12 per sheet.

Bake for 11-13 minutes, or until the edges are golden and the middle still appears slightly undercooked. Remove from oven, and allow to cool five minutes on the cookie sheet before transferring to a cooling rack.
